5-minute vegetarian wrap, perfect for quick lunches. Prep ahead for work convenience.
Ingredients:
  • 80g canned chickpeas, rinsed, drained
  • 2 tsp chopped fresh continental parsley leaves
  • 19.80 gm mayonnaise
  • 10.60 gm fresh lemon juice
  • 2.95 gm Dijon mustard
  • 1 spinach and/or herb wrap
  • 1/4 avocado, sliced
  • 10g baby spinach
  • 50g (1/4 cup) chargrilled red capsicum strips
Instructions:
  • Mash chickpeas roughly in a bowl using a fork or potato masher. Add parsley, mayonnaise, lemon juice, and mustard. Stir well to combine, then season to taste.
  • Place the wrap on a pristine surface. Add the chickpea mixture, avocado, spinach, and capsicum on top. Season to taste. Fold the wrap to enclose all the delicious fillings.
