Buttery sauteed spinach and mushrooms create a cheesy sauce enveloping fluffy gnocchi in this simple, speedy vegetarian dish.
Ingredients:
  • 1 (16 ounce) package gnocchi pasta
  • 4 tablespoons butter
  • 1 cup sliced baby portobello mushrooms
  • 3 cups baby spinach
  • 3 tablespoons chopped fresh basil
  • 2 tablespoons chopped garlic
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon chopped fresh parsley
  • salt and ground black pepper to taste
Instructions:
  • Bring a generously salted pot of water to a boil. Cook gnocchi until they float, 2 to 4 minutes. Drain and set aside.
  • Melt butter in a saucepan, then saute mushrooms for 2 minutes. Add spinach, basil, garlic, Parmesan cheese, parsley, salt, and pepper. Cook until spinach wilts and sauce thickens, about 5 minutes. Stir in gnocchi and cook for an additional 2 minutes until coated in sauce.
