Mouthwatering vegetarian kofta pitas made with Impossible™ burger and fragrant Middle Eastern spices.
Ingredients:
  • 1 medium onion, cut into chunks
  • 0.25 cup fresh cilantro leaves
  • 1.5 (12 ounce) packages meatless ground beef substitute (such as Impossible(TM) Foods)
  • 2 teaspoons ground paprika
  • 1 teaspoon Greek seasoning
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon cayenne pepper
  • salt and ground black pepper to taste
  • 4 (6 inch) pita bread rounds, cut in half
  • 0.5 cup shredded lettuce, or to taste
  • 0.25 cup diced tomato, or to taste
  • 2 tablespoons diced onion, or to taste
  • 8 tablespoons tzatziki
Instructions:
  • Heat up your outdoor grill to a perfect medium-high temperature and give the grate a quick, light oiling.
  • In a food processor, blitz onion and cilantro until minced. Add ground beef substitute, paprika, Greek seasoning, cumin, cinnamon, cayenne, salt, and pepper. Pulse until fully combined. Shape the mixture into eight 4x2-inch patties.
  • Grill patties until cooked through, about 7-8 minutes per side, reaching an internal temperature of 160°F (70°C) when checked with a thermometer.
  • Stuff each pita half with shredded lettuce, diced tomato, diced onion, 1 tablespoon of tzatziki, and a cooked patty.
