Create a delectable meat-free Thai pad see ew.
Ingredients:
  • 300g firm tofu
  • 450g fresh wide rice noodles
  • 20.00 gm cornflour
  • 75.08 gm peanut oil
  • 1 bunch gai lan, chopped, stems halved
  • 3 garlic cloves, crushed
  • 42.00 gm light soy sauce
  • 42.00 gm dark soy sauce
  • 32.00 gm brown sugar
  • 1 egg, lightly beaten
Instructions:
  • Place the tofu on a paper towel-lined plate to drain for 10 minutes. Pat it dry, then cut it into 16 cubes.
  • Place noodles in a heatproof bowl and cover with boiling water. Let sit for 4 minutes to soften. Use a fork to separate the noodles and then drain.
  • In a large shallow dish, mix cornflour with salt and pepper. Heat oil in a wok over high heat. Coat tofu in seasoned cornflour and fry until golden and crisp, about 3 to 4 minutes. Remove tofu with a slotted spoon and let it drain on paper towels.
  • Preheat wok over high heat. Cook gai lan stems for 2 minutes until tender. Add leaves and stir-fry for 1 more minute until wilted. Add tofu, noodles, garlic, sauces, and sugar. Stir-fry until everything is hot and well combined.
  • Create a hollow in the middle of the noodles and crack in the egg. Cook for 2 minutes until the egg begins to solidify. Mix the egg into the noodles, then dish up and enjoy!
