Vegetarian pastry pockets bursting with savory flavors, inspired by the classic meat pasties.
Ingredients:
  • 3 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 1 cup butter
  • 2 teaspoons distilled white vinegar
  • 3.5 cups water
  • 1 cup dry lentils
  • 3 potatoes, chopped
  • 1 onion, chopped
Instructions:
  • Preheat the oven to 350°F (175°C) for perfect baking results.
  • Prepare the dough by combining flour, salt, and baking powder in a medium mixing bowl. Add butter and mix until crumbly. Stir in egg, vinegar, and 1/2 cup water until a moist dough forms (add more water if needed). Shape the dough into a large ball.
  • Prepare the filling by bringing 3 cups of water to a boil in a pot. Add lentils and simmer for 30 to 45 minutes until tender, adding water as needed.
  • Wrap the potatoes in shiny aluminum foil and bake in the oven until tender. Once cooled, dice the potatoes and gently combine with the lentils.
  • Saute onions in a frying pan with oil. Mix the sauteed onions into the potato-lentil mixture. Season with salt and mix well.
  • Divide the dough into 6 - 8-inch circles, then lay them on a floured surface. Add one cup of filling to the center of each circle. Fold the dough around the filling, seal the edges, and place the pasties on an ungreased cookie sheet. Bake in the preheated oven for one hour.
