Delicious meatless version of a classic sandwich.
Ingredients:
  • 1 pound smoked Cheddar cheese, shredded
  • 1 cup thousand island salad dressing, or to taste
  • 1 (16 ounce) jar sauerkraut, drained
  • 12 slices dark rye bread
  • 2 tomatoes, sliced
Instructions:
  • Combine cheese and sauerkraut in a large mixing bowl. Drizzle with dressing, ensuring everything is well coated. Mix until fully combined.
  • Spread a generous amount of the cheese mixture on half of the bread slices without butter. Add sliced tomato and cover with another slice of bread.
  • Preheat a large skillet over medium-high heat. Cook sandwiches on both sides until golden and cheese is melted.
