Delicious Thai summer rolls with crispy broccoli slaw, cucumbers, and tofu in rice paper wrappers, great as a starter or entree.
Ingredients:
  • cooking spray
  • 1 (14 ounce) package firm tofu, drained and cubed
  • 1 (12 ounce) package spring roll wrappers
  • 1 medium cucumber, chopped
  • 1 (12 ounce) package broccoli slaw
  • 0.5 cup Thai peanut sauce, or more to taste
Instructions:
  • Prepare a large pan or wok with a mist of cooking spray and heat it over medium heat. Sear tofu until golden brown on all sides, approximately 8 to 10 minutes, shaking the pan occasionally. Take the pan off the heat.
  • 1. Soak a spring roll wrapper in water for about 15 seconds until softened. 2. Transfer the softened wrapper to a work surface and add 1 tablespoon of tofu, 1 tablespoon of cucumber, and 2 tablespoons of broccoli slaw on one edge. 3. Fold in the sides and roll the ingredients to form a spring roll. 4. Repeat with the remaining ingredients.
  • Drizzle peanut sauce over rolls before serving.
