Create authentic and delicious sushi rolls effortlessly with this easy Japanese recipe.
Ingredients:
  • 110g rice
  • 15.00 gm rice or white wine vinegar
  • Olive oil spray
  • 1 egg, lightly whisked
  • 20.00 gm mayonnaise (optional)
  • 1 small Lebanese cucumber, deseeded, cut into matchsticks
  • 1 small carrot, cut into matchsticks
  • 2 sheets Sushi Nori (roasted seaweed)
Instructions:
  • Mix the chilled rice with vinegar, then set it aside.
  • Heat a small non-stick frying pan over medium heat with a light spray of oil. Add the egg and swirl to coat the base evenly. Cook for 1 minute on each side until cooked through. Transfer the omelet to a plate to cool, then roll it up tightly and slice into 5mm thick pieces. Enjoy!
  • Lay a nori sheet on a moist sushi mat or tea towel with the smooth side facing down. Gently spread half of the sushi rice over the sheet, keeping a 3cm strip free at one end. Follow by evenly spreading half of the mayonnaise down the center, and topping with half of the cucumber, carrot, and egg.
  • Using both hands, firmly roll up the ingredients in the mat or tea towel to completely enclose the filling. Repeat this process with the remaining ingredients. Cut the roll into slices using a serrated knife.
