Turkey sushi rolls with tortillas and veggie cream cheese - perfect for seafood skeptics!
Ingredients:
  • 0.75 cup fresh spinach, chopped
  • 0.25 cup cream cheese, softened
  • 0.25 cup shredded Cheddar cheese, or more to taste
  • 4 pickled peppers, chopped
  • 0.5 spring onion (green part only), chopped, or more to taste
  • 0.75 teaspoon ground black pepper
  • 2 pinches red pepper flakes
  • 2 flour tortillas
  • 0.5 pound sliced deli turkey meat
Instructions:
  • Combine the spinach, cream cheese, Cheddar cheese, pickled peppers, spring onion, garlic powder, black pepper, and red pepper flakes in a bowl. Spread a 1-inch wide layer of the cream cheese mixture on the top half of each tortilla, saving 1 tablespoon of the mixture for sealing purposes.
  • Lay turkey slices on each tortilla over the cream cheese mixture. Spread a thin line of the reserved cream cheese mixture below the turkey. Roll each tortilla tightly, starting from the end with the most cream cheese. Seal the end with a small amount of cream cheese. Cut the rolls into 1/2-inch-wide slices to make turkey 'sushi' rolls.
