Experience the ultimate Christmas feast with this turkey and ham combination!
Ingredients:
  • 50g butter
  • 1 small brown onion, finely chopped
  • 4 garlic cloves, crushed
  • 20.00 ml Italian Herbs, plus extra to serve
  • 40.00 ml dried cranberries
  • 500.00 ml fresh breadcrumbs
  • 1 egg, lightly beaten
  • 1.8kg fresh single turkey breast with skin
  • 3 large, thin slices ham off the bone
  • 125g brie, thinly sliced
  • 57.20 gm honey
  • 1.48 gm djion mustard
  • Roasted vegetables, to serve
  • Gravy, to serve
Instructions:
  • In a frying pan over medium-high heat, melt half of the butter until sizzling. Add onion and sauté for 5 minutes until tender. Stir in garlic and Italian herbs, cooking for 1 minute until aromatic. Incorporate cranberries, mix well, then transfer to a large bowl to cool completely.
  • Combine breadcrumbs and egg with the flavorful onion mixture. Season generously with salt and pepper, then mix thoroughly.
  • Carefully slice along one side of the turkey breast, making sure not to cut all the way through, then lay it out flat with the skin faced down. Tenderize the meat to a 2cm thickness using a meat mallet or rolling pin. Remove the plastic wrap and layer the ham slices on top, followed by the brie. Spread the breadcrumb mixture over the ingredients, pressing gently. Roll the turkey into a log shape starting from one end. Secure the roll with kitchen string at 4cm intervals.
  • In a small bowl, mix honey and mustard, then season with salt and pepper. Microwave on HIGH for 20 seconds until melted. Next, melt remaining butter in a large frying pan over medium-high heat. Cook turkey breast for 10 minutes, turning until browned. Transfer to a roasting pan and brush with some of the honey mixture. Bake for 1 hour 30 minutes, brushing with the remaining honey mixture every 15 minutes until cooked through. Rest for 15 minutes, then slice and serve with roasted vegetables sprinkled with extra Italian herbs and gravy.
