Elevate your rissoles by adding veggies! Our lean turkey rissoles are coated in a delicious sweet and savory sticky sauce.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 1 red capsicum, deseeded, finely chopped
  • 300g sweet potato, peeled, coarsely grated
  • 120g baby spinach, plus extra, to serve
  • 400g turkey breast mince
  • 21.60 gm hoisin sauce, plus 21.60 gm, extra
Instructions:
  • In a large non-stick frying pan over medium heat, warm 2 tsp oil. Sauté capsicum for 1 minute until slightly softened, then add sweet potato and cook for 2-3 minutes until tender. Transfer to a large bowl and allow to cool.
  • Place the spinach in a heatproof bowl and cover with boiling water to wilt for 10 seconds. Drain, refresh under cold running water, and then squeeze any excess liquid. Coarsely chop and add to the sweet potato mixture using clean hands.
  • Combine the turkey and hoisin with the sweet potato mixture. Season generously, then use your clean hands to mix everything together. Shape the mixture into 16 delicious rissoles.
  • Heat the leftover oil in the pan over medium heat until sizzling. Sear the rissoles for 3-4 minutes per side until beautifully golden and fully cooked. Stir in additional hoisin sauce and 2 tablespoons of water, ensuring everything is well coated. Plate the rissoles and accompany them with more fresh spinach for a delightful presentation.
