Quick and delicious hoisin-glazed meatballs perfect for a fast weeknight dinner.
Ingredients:
  • 1 pound 80% lean ground beef
  • 1/2 cup panko bread crumbs
  • 1 egg, lightly beaten
  • 4 tablespoon less-sodium soy sauce
  • 3 cloves garlic, minced
  • 11/2 teaspoon minced fresh ginger
  • 1/2 cup hoisin sauce
  • 2 tablespoon honey
  • 1 green onion, minced
  • 2 tablespoon rice vinegar
  • 2 teaspoon toasted sesame oil
  • 1 tablespoon vegetable oil
  • 1 pound green beans, trimmed
  • Hot cooked white rice, for serving
  • Toasted sesame seeds and sliced green onion, for garnish
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) and generously grease a baking sheet.
  • In a bowl, combine ground beef, panko, egg, 1 tablespoon soy sauce, 2 cloves garlic, and 1 teaspoon ginger until just mixed (take care not to overmix). Form mixture into 11/2-inch balls and place on a baking sheet.
  • Bake for 10 to 12 minutes or until the meatballs reach 160 degrees F (71 degrees C when checked with an instant-read thermometer.
  • Combine hoisin sauce, honey, green onion, vinegar, sesame oil, 3 tablespoons soy sauce, garlic, and ginger in a large saucepan. Simmer over medium-low heat for about 5 minutes until slightly reduced. Set aside 2 tablespoons for green beans. Add meatballs to the saucepan and simmer for 2 minutes until flavors meld.
  • Heat vegetable oil in a large skillet over medium-high heat. Cook beans until tender and lightly blistered, stirring occasionally, for 4 to 5 minutes. Add reserved sauce to coat beans. Serve meatballs with beans over rice, garnished with sesame seeds and green onion.
