Vegie sushi rolls

Enjoy making delicious sushi rolls at home!
Ingredients:
  • 110g rice
  • 15.00 gm rice or white wine vinegar
  • Olive oil spray
  • 1 egg, lightly whisked
  • 2 sheets sushi nori (roasted seaweed)
  • 20.00 gm mayonnaise (optional)
  • 1 small Lebanese cucumber, deseeded, cut into matchsticks
  • 1 small carrot, cut into matchsticks
Instructions:
  • Mix the chilled rice with vinegar, then let it sit.
  • Heat a well-oiled frying pan over medium heat. Crack the egg into the pan and cook for 1 minute on each side until cooked through. Transfer the omelette to a plate to cool, then roll it up tightly and slice into 5mm-thick pieces.
  • Lay nori sheet with the smooth side facing down. Gently spread half of the sushi rice evenly, keeping a 3cm strip free at one end. Add half of the mayonnaise down the center, followed by half of the cucumber, carrot, and egg.
  • Roll up the ingredients tightly to seal in all the delicious flavors. Repeat this process with the rest of the ingredients, then simply slice into portions.
