Vegetable goulash: A hearty meatless dish served with your choice of rice, noodles, or potatoes. Perfect for a satisfying vegetarian meal.
Ingredients:
  • 1 teaspoon olive oil
  • 0.5 medium onion, thinly sliced
  • 1 small green bell pepper, thinly sliced
  • 4 ounces mycoprotein pieces, e.g., Quorn™
  • 1 clove garlic, chopped
  • 1 teaspoon paprika
  • 1 (14.5 ounce) can whole peeled tomatoes, chopped, juice reserved
  • 0.5 cup red wine
  • 1 teaspoon dried oregano
  • 1 teaspoon tomato puree
  • 1 teaspoon sugar
  • salt and pepper to taste
Instructions:
  • In a large skillet over medium heat, sauté the onion in olive oil until tender, about 5 minutes. Add green pepper and mycoprotein pieces, and sauté until pepper is tender, another 5 minutes. Stir in garlic and paprika.
  • Add the tomatoes, including their juices, to the skillet. Incorporate the wine, oregano, and tomato purée. Let the mixture come to a boil, then lower the heat and simmer until it thickens, approximately 25 minutes.
  • Just before serving, sprinkle in sugar and season with a pinch of salt and freshly ground pepper to enhance the flavors.
