Loaded veggie hash with potatoes and fresh veggies, topped with a fried egg for a satisfying meal in one.
Ingredients:
  • 2 Tablespoons olive oil
  • 1 1/2 pounds red potatoes, cubed
  • 1 small onion, diced
  • 8 ounces mushrooms, sliced
  • 8 multicolored mini bell peppers (or 1 large bell pepper, any color), stemmed and chopped
  • 1 teaspoon salt
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried parsley flakes
  • 1/2 teaspoon ground black pepper
  • 1 (15.5 ounce) can chickpeas, drained
  • 1/3 cup packed baby spinach leaves
  • 4 fried eggs (optional)
Instructions:
  • In a large skillet over medium-high heat, sizzle the oil. Toss in the potatoes, onion, and mushrooms. Stir and cook for 10 minutes.
  • Sprinkle in mini bell peppers, salt, paprika, parsley, and pepper. Allow to simmer for an additional 10 minutes.
  • Combine chickpeas and spinach in the pan, cooking until the spinach wilts, which should take about 5 minutes. Transfer the mixture onto serving plates and optionally crown each portion with a fried egg.
