Savor a garlic-infused pasta and veggie frittata with savory clams - a delightful meal.
Ingredients:
  • 6 ounces uncooked vermicelli
  • 2 cans (6 1/2 ounces each) minced clams, drained
  • 1 tablespoon vegetable oil
  • 1 small red bell pepper, chopped (1/2 cup)
  • 2/3 cup sliced green onions (6 medium)
  • 1 clove garlic, finely chopped
  • 4 eggs
  • 2 tablespoons milk
  • 2 tablespoons grated Romano cheese
  • 1/4 teaspoon pepper
Instructions:
  • Preheat your oven to 375°. Grease a 10-inch pie plate. Cook vermicelli according to package instructions, then mix with clams. Transfer the mixture to the pie plate and gently press down.
  • In an 8-inch skillet, heat oil over medium heat. Cook bell pepper, onions, and garlic in the oil, stirring occasionally, until the vegetables are crisp-tender. Spread the mixture evenly over the vermicelli.
  • Whisk together eggs, milk, cheese, salt, and pepper. Pour mixture over vegetables. Bake for 20 to 25 minutes until the center is firm. Allow it to rest for 5 minutes before slicing.
