Vietnamese Beef And Lettuce Curry

Easy mild curry with rice, featuring unique touch of lettuce for Western palates.
Ingredients:
  • 1 cup uncooked long grain white rice
  • 2 cups water
  • 5 teaspoons white sugar
  • 1 clove garlic, minced
  • 0.25 cup fish sauce
  • 5 tablespoons water
  • 1.5 tablespoons chile sauce
  • 1 lemon, juiced
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 pound ground beef
  • 1 tablespoon ground cumin
  • 1 (28 ounce) can canned diced tomatoes
  • 2 cups lettuce leaves, torn into 1/2 inch wide strips
Instructions:
  • Combine the rice and water in a pot and bring to a boil. Lower the heat, cover, and let it simmer for 25 minutes.
  • Combine sugar and 1 clove of garlic in a bowl, then mash together using a pestle. Stir in fish sauce, water, chile sauce, and lemon juice.
  • In a sizzling wok, swiftly saute 3 cloves of garlic in oil. Add beef, sprinkle with cumin, and cook until beautifully browned. Pour in tomatoes and half of the fish sauce mixture. Simmer on low for 20 minutes until sauce thickens to perfection.
  • Combine the lettuce with the beef mixture, then serve immediately over the cooked rice with the extra fish sauce mixture served on the side.
