Spicy sausage dish with southern flair, best with smoked andouille or kielbasa. Serve with rice.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 pound smoked sausage of your choice, sliced
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 0.5 teaspoon minced garlic
  • 2 tablespoons dried parsley
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 1 tablespoon ground black pepper
  • 2 (15 ounce) cans dark red kidney beans
  • 1 (15 ounce) can light red kidney beans
  • 2 (14.5 ounce) cans diced tomatoes
  • 5 green chile peppers, chopped
  • 1 teaspoon salt
Instructions:
  • In a large skillet over medium high heat, heat oil. Add sausage and onion; saute until onions are translucent. Stir in bell pepper, garlic, parsley, paprika, cayenne pepper, and ground black pepper. Cook, stirring occasionally, until bell pepper is slightly tender (around 10 minutes).
  • Rinse kidney beans and combine with tomatoes and chile peppers. Stir well and simmer over medium heat for 25 to 30 minutes. Season with salt to taste and serve hot.
