Vinegared carrots with roasted pears

Elevate your meal with a delightful sweet and sour carrot and pear side dish!
Ingredients:
  • 4 firm pears, peeled, cored, halved
  • Sea salt flakes and freshly ground black pepper
  • 20.00 ml coconut syrup (see tip)
  • 8 medium carrots, peeled, thinly sliced into ribbons
  • 60ml (1/4 cup) red wine vinegar
  • 1/2 bunch fresh chives, finely snipped
  • 20.00 ml sunflower seeds, toasted
Instructions:
  • Preheat the oven to 200C (180C fan-forced).
  • Coat the pears in olive oil and season generously with salt and pepper. Place them in a roasting pan and bake for 30 minutes. Finish by drizzling with coconut syrup and baking for an additional 15 minutes.
  • Combine the carrot and vinegar in a non-metallic bowl. Let it sit for 30 minutes.
  • Mix the carrots, pears, chives, and sunflower seeds together.
