Ingredients:
  • 8 pickling onions, peeled, leaving roots and tops intact, halved
  • 40g raisins
  • 180ml red wine vinegar
  • 32.00 gm light brown sugar
  • 1 Treviso radicchio, cut into 2cm-thick slices
Instructions:
  • Combine onions, plump raisins, tangy vinegar, and sweet sugar in a stainless steel saucepan. Bring to a gentle boil over medium heat. Simmer on low-medium heat, stirring occasionally, for 20 minutes until onions are soft and the liquid has thickened.
  • Arrange the ingredients elegantly on a platter with vibrant radicchio. Generously drizzle with the flavorful cooking liquid and a touch of high-quality oil. Season to your liking, then serve and enjoy the delicious dish.
