Ingredients:
  • 1 large onion, finely chopped
  • 1 carrot, finely diced
  • 1 zucchini, finely diced
  • 400g can borlotti beans, rinsed and drained
  • 100g reduced-fat fetta, crumbled
  • 57.50 gm walnuts, roughly chopped
  • 125.00 ml fresh flat-leaf parsley, finely chopped
  • juice of 1 lemon
Instructions:
  • In a large frying pan over medium heat, warm 1 tablespoon of oil. Sauté onion and carrot until tender, about 3 to 4 minutes, stirring occasionally. Mix in zucchini and cook for an additional 1 to 2 minutes.
  • Stir in borlotti beans and cook for 5 to 7 minutes. Take the pan off the heat and gently mix in feta, walnuts, and parsley. Season with salt and pepper to taste.
  • Drizzle the remaining oil and lemon juice over the dish, mix thoroughly, and enjoy!
