Create a delicious warm chicken salad with just six simple ingredients!
Ingredients:
  • 2 large lemons
  • 18.20 gm olive oil
  • 500g chicken thigh fillets, trimmed, halved
  • 600g chat potatoes
  • 150g green beans, trimmed, cut into 4cm pieces
  • 82.50 ml Spanish stuffed olives, drained, sliced
  • 80g baby spinach
Instructions:
  • Grate 1 lemon finely, then squeeze out the juice. In a glass or ceramic dish, mix together the lemon rind, 1 tablespoon of lemon juice, and oil. Add chicken and coat well. Season with salt and pepper. Cover and refrigerate for 30 minutes, if possible.
  • In a large saucepan, simmer potatoes in cold water until tender, adding beans for the last 3 minutes. Drain and cool under cold water. Slice potatoes and combine with beans in a large bowl.
  • Heat a large non-stick frying pan over medium-high heat. Brown and cook the chicken for 6 to 7 minutes each side. Place on a cutting board and thinly slice. Add the sliced chicken to the potato mixture along with olives and spinach. Drizzle with the remaining lemon juice, season with salt and pepper, gently toss to combine, and serve.
