Create a vibrant, low-calorie salad easily!
Ingredients:
  • 2 chicken breasts, trimmed
  • 625.00 gm water
  • 50g vermicelli rice noodles
  • 3 spring onions, sliced diagonally
  • 250.00 ml beansprouts, trimmed
  • 1 carrot, thinly sliced
  • 100g snow peas, thinly sliced
  • 1 small red capsicum, thinly sliced
  • 250.00 ml herbs (such as mint and coriander)
  • 87.45 gm oil-free chilli and lime dressing
Instructions:
  • Gently simmer chicken in water in a frying pan over low heat for 10 minutes. Remove from heat and let it stand for an additional 10 minutes. Then, shred the chicken.
  • Cook the noodles in boiling water, then drain them. Mix all the ingredients together, gently toss, and serve.
