Delicious chicken salad perfect for lunch or a vibrant side dish.
Ingredients:
  • 5 (about 280g) chat (small coliban) potatoes, halved
  • 3 (about 720g) single chicken breast fillets, trimmed
  • 130g (1/2 cup) gourmet caesar salad dressing (Superb brand)
  • 40.00 ml chopped fresh chives
  • Freshly ground black pepper
  • 1 cos lettuce, washed, dried, roughly torn
  • 310g watercress, stems trimmed, sprigs picked, washed, dried
  • 35g (1/4 cup) golden walnuts, chopped
  • 1 410g can beetroot wedges, drained
Instructions:
  • In a medium saucepan, simmer potatoes in ample cold water until tender, about 10 minutes. Drain and transfer to a large bowl.
  • While heating a large frying pan of water over high heat until boiling, gently add the chicken fillets. Lower the heat to medium-low and cook for 4 minutes on each side, or until the chicken is cooked through. Take the chicken out of the water and let it sit for 5 minutes to cool slightly, then break it into large pieces.
  • Mix the caesar salad dressing and chives in a small bowl, then season to taste with pepper.
  • In a large bowl, toss together the lettuce, watercress, and walnuts. Divide the mixture among serving bowls. Top with chicken, potatoes, and beetroot. Drizzle with dressing and serve right away.
