Ingredients:
  • 2 navel oranges
  • 1 lime
  • 3 mandarins
  • 3 tangelos
  • 62.50 ml shredded fresh mint leaves
  • 150g (2/3 cup) sugar
  • 250mls (1 cup) water
  • Thickened cream or vanilla ice-cream, to serve
  • Almond biscuits or biscuits of your choice, to serve
Instructions:
  • Peel the rind from 1 orange and lime using a vegetable peeler. Set aside the fruit. Remove the white pith from the rind with a small sharp knife and cut into thin strips. Set aside.
  • Peel the remaining orange, mandarins, and tangelos, ensuring to remove the white pith from all the fruit, including the reserved orange. Slice the fruit into 5mm-thick slices and layer them in a serving bowl, adding shredded mint between each layer for a refreshing twist.
  • In a saucepan, mix sugar and water over medium heat until sugar dissolves. Boil, then stir in reserved citrus peel strips. Simmer for 10 to 15 minutes until peel is translucent and syrup thickens slightly.
  • Take off the heat, mix in the lime juice, and drizzle over the fruit in the serving dish. Enjoy warm with cream and biscuits.
