Warm fruit salad with star anise custard

Ingredients:
  • 4 mandarins, peeled, segmented
  • 3 bananas
  • 50g butter
  • 32.00 gm brown sugar
  • 250g strawberries, washed, hulled
  • 20.00 ml Malibu
  • 250ml milk
  • 3 whole star anise or 1 cinnamon stick
  • 3 egg yolks
  • 40.00 gm caster sugar
Instructions:
  • Heat milk and star anise in a saucepan until hot but not boiling. Whisk egg yolks and sugar until combined. Slowly whisk in the hot milk. Cook until thickened and coats the back of a spoon. Remove from heat.
  • Carefully peel the mandarin segments, discarding any white membrane. Peel the bananas and slice them diagonally into thick pieces.
  • In a large frying pan over medium heat, melt the butter. Stir in the sugar until dissolved. Add the mandarins, bananas, and strawberries, and cook for 2 minutes, turning occasionally.
  • Turn up the heat to high. Pour in the Malibu and cook, stirring for 2 minutes or until slightly thickened. Serve the fruit with the custard.
