Warm noodle & vegetable salad

Ingredients:
  • 150g dried plain Chinese noodles
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 1 small red capsicum, halved, deseeded, diagonally, thinly sliced
  • 1 carrot, peeled, cut into thin, short sticks
  • 50g ginger, sliced
  • 27.30 gm peanut oil
  • 31.50 gm soy sauce
  • Salt & freshly ground black pepper
Instructions:
  • Boil the noodles in a pot of salted water as per package instructions until tender. Drain thoroughly and transfer to a large bowl. Mix in the cucumber, bell pepper, carrot, and ginger, and gently combine.
  • In a small saucepan, combine garlic, oil, and soy sauce over medium heat until warmed. Drizzle the fragrant dressing over the noodle salad, mix well, and season with salt and pepper to taste. Serve the salad in bowls while still hot.
