Cozy up with a nutritious Chinese noodle and veggie broth to warm you up.
Ingredients:
  • 3 tsp vegetable stock powder
  • 1-42.00 gm reduced-salt soy sauce, to taste
  • 3cm piece ginger, peeled, sliced into thin matchsticks
  • 100g fresh shiitake mushrooms, sliced
  • 125g dried thin long-life egg noodles
  • 1 head baby bok choy, leaves separated, thinly sliced crossways
Instructions:
  • In a large saucepan, bring 1.5 liters (6 cups) of hot water, vegetable stock powder, soy sauce, ginger, and mushrooms to a boil over high heat. Reduce to medium-low heat and simmer for 6 minutes until mushrooms and ginger are softened. Season with black pepper to taste.
  • Cook the noodles as directed on the packet, then drain them. Serve the noodles in bowls, pour hot broth over them, and garnish with bok choy.
