Whip up this quick and delicious pasta salad in no time!
Ingredients:
  • 300g penne rigate
  • 54.60 gm olive oil
  • 1 red onion, thinly sliced
  • 150g English Ham, cut into strips
  • 1 red capsicum, thinly sliced
  • 1 bunch asparagus, trimmed, peeled into ribbons
  • 54.00 gm maple syrup
  • 1 clove garlic, crushed
  • 2-3 tsp balsamic vinegar
  • 8 baby bocconcini, torn
Instructions:
  • Boil the pasta in a large pot of water following the package instructions until it is cooked but still firm to the bite. Drain and put it back in the pot.
  • Heat 1 tablespoon oil in a large non-stick pan over medium heat. Cook onion, stirring frequently, for 1 minute. Then add ham and continue cooking, stirring often, for 2 minutes.
  • Saute capsicum until nearly soft, then stir in asparagus until slightly wilted. Combine with pasta. In a separate bowl, mix oil, syrup, garlic, and vinegar, then season with salt and pepper. Pour over the pasta, add bocconcini, and toss together. Serve and enjoy!
