Warm potato salad

Delicious and nutritious potato salad.
Ingredients:
  • 4 desiree potatoes, peeled, cut into 2cm cubes
  • 150g pea
  • 2 sticks celery, trimmed and sliced
  • 60ml olive oil
  • 60ml lemon juice
  • Salt & freshly ground pepper
  • 20.00 ml fresh parsley, chopped
Instructions:
  • Boil potatoes in a saucepan for 10-12 minutes, adding peas in the last 5 minutes or until veggies are tender. Drain well.
  • Combine potatoes, peas, and celery in a stylish serving bowl.
  • Combine the olive oil and lemon juice in a small bowl, then season with salt and pepper to taste.
  • Drizzle dressing over the potatoes, peas, and celery, gently mix together. Top with fresh parsley and toss to incorporate. Serve while warm.
