Warm radicchio and butter bean salad

Satisfy winter cravings with this hearty radicchio and bean salad.
Ingredients:
  • 27.30 gm extra virgin olive oil
  • 2 garlic cloves, thinly sliced
  • 20.00 ml fresh oregano leaves
  • 400g can butter beans, drained, rinsed
  • 1 bunch radicchio, leaves separated
  • 20.00 ml red wine vinegar
  • 40.00 ml chopped fresh chives
Instructions:
  • In a large frying pan over medium heat, heat 1 tablespoon of oil. Add garlic and oregano, then cook and stir for 1 minute until fragrant.
  • Combine the beans and radicchio in the pan and gently toss for 1 to 2 minutes until the beans are heated through and the radicchio begins to wilt.
  • Drizzle with vinegar and the rest of the oil, toss for 1 minute, then remove from heat. Sprinkle with chives before serving.
