Ingredients:
  • 250g green beans, trimmed
  • 200g golden grape tomatoes, halved
  • 400g can four bean mix, drained, rinsed
  • 1/2 medium red onion, thinly sliced
  • 20.00 ml baby capers, rinsed
  • 125.00 ml chopped fresh flat-leaf parsley leaves
  • 36.40 gm olive oil
  • 80g radicchio leaves, torn
Instructions:
  • Blanch green beans in a pot of boiling water for 2 minutes until just tender. Quickly cool them in cold water and then drain.
  • In a large bowl, combine tomatoes, bean mix, onion, capers, parsley, oil, lemon juice, garlic, radicchio, and green beans. Season with pepper and toss to combine. Serve as is or consider adding 1/3 cup of toasted pine nuts for an extra crunch and flavor boost.
