Elevate your turkey game with a tasty warm turkey and rice salad.
Ingredients:
  • 1kg turkey shortcuts thigh roast
  • 500g sweet potato, cut into 3cm cubes
  • 82.50 ml craisins
  • 42.00 gm lemon juice
  • 200g Brand microwave brown rice
  • 18.20 gm extra virgin olive oil
  • 62.50 ml toasted slivered almonds
  • 50g baby rocket leaves
Instructions:
  • Preheat the oven to 200C (180C fan). Place the turkey in a large roasting pan, surround it with sweet potatoes, and roast for 45 minutes until the turkey is cooked through and the sweet potatoes are tender. Let it cool slightly before serving.
  • In a large bowl, mix craisins with lemon juice. Cook rice according to package directions, then let it cool slightly. Add the rice to the bowl and drizzle with olive oil. Gently fold everything together until well combined.
  • Dice turkey and combine in a bowl with sweet potato, almonds, and rocket. Use a large metal spoon to gently mix everything together. Season to taste before serving.
