Watermelon Cake

Indulge in a decadent watermelon treat with chocolate seeds - a delightful surprise!
Ingredients:
  • 1/2 cup plus 2 tablespoons miniature semisweet chocolate chips
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 1 package (0.13 oz) cherry-flavored or other red-colored unsweetened soft drink mix
  • Green and red food colors
  • 2/3 cup green jelly beans
Instructions:
  • Preheat oven to 350°F (or 325°F for dark or nonstick pans) and grease two 8- or 9-inch round cake pans. In a small bowl, mix 1/2 cup of chocolate chips with 1 tablespoon of cake mix. In a large bowl, combine the remaining cake mix, water, oil, egg whites, and drink mix. Beat with an electric mixer on low speed for 30 seconds, then on medium speed for 2 minutes, scraping the bowl occasionally. Fold in the 1/2 cup of chocolate chips. Pour the batter into the prepared pans.
  • Simply follow the baking and cooling instructions on the box for 8- or 9-inch round pans.
  • Combine 1 cup of frosting with 10 to 12 drops of green food color in a small bowl. Mix 10 to 12 drops of red food color into the rest of the frosting. Frost the sides of the cakes with the green frosting and press green jelly beans onto the frosting. Frost the tops of the cakes with the red frosting and press 2 tablespoons of chocolate chips onto the frosting for seeds. Optionally, cut the cakes in half crosswise and arrange the "slices" randomly on a tray. To serve, cut into wedges and store loosely covered.
