Watermelon Push-It-Up Cakes: Mini chocolate chip cake bites in a delightful watermelon design. A summer treat like no other!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • Red food color
  • 3/4 cup miniature semisweet chocolate chips
  • 2 tubs (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • Green food color
  • 20 plastic push-up pop containers
  • Additional miniature semisweet chocolate chips
Instructions:
  • Preheat the oven to 350°F and generously coat 40 mini muffin cups with cooking spray.
  • Prepare the cake mix according to the box instructions with water, oil, and egg whites. Mix in 10 to 15 drops of red food coloring and 3/4 cup of chocolate chips. Fill muffin cups two-thirds full. If saving some batter for later, refrigerate it until ready to use, making sure to cool the pan before reusing and spraying it again with cooking spray.
  • Bake for 10 to 12 minutes until a toothpick inserted in the center comes out clean. Let them cool for 5 minutes, then transfer to a cooling rack to cool completely. Repeat with the rest of the batter to make around 32 mini cupcakes. Freeze for later use.
  • Combine the frosting with the green food color until you achieve the perfect shade of green. Transfer the green frosting to a piping bag with your preferred tip or a resealable plastic bag with a small corner snipped off.
  • In each push-up pop container, layer a dollop of frosting, followed by one mini cupcake. Pipe more frosting on top of the cupcake, then add another cupcake and pipe more frosting. Sprinkle chocolate chips on top to mimic watermelon seeds. Cover with the caps and refrigerate until serving.
