Elevate your BBQ salad with refreshing watermelon chunks for a summery twist.
Ingredients:
  • 8 Chicken Thigh Fillets
  • 18.20 gm olive oil
  • 20.00 ml Moroccan seasoning
  • 250.00 ml mint leaves
  • 210g yoghurt
  • 1/4 watermelon, thinly sliced, cut into wedges
  • 2 red radishes, thinly sliced
  • 1 Lebanese cucumber, cut into ribbons
  • 1 red onion, thinly sliced
  • 125.00 ml coriander leaves
  • 40.00 ml pistachios, coarsely chopped (optional)
Instructions:
  • In a large bowl, toss the chicken with oil and fragrant Moroccan seasoning. Don't forget to season generously.
  • Preheat a barbecue grill or chargrill to medium-high heat. Grill the chicken for 3-4 minutes on each side until golden brown and fully cooked. Transfer to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Chop half of the mint finely in a food processor. Blend in half of the yogurt until smooth. Transfer to a bowl and mix in the rest of the yogurt. Season to taste.
  • Assemble the chicken, watermelon, radish, cucumber, onion, coriander, and any leftover mint on a serving platter. Serve with the yogurt mixture and optional pistachios.
