Pasta-Chicken Salad on Watermelon Wedges

Quick and delicious pasta chicken salad with refreshing watermelon wedges ready in 15 minutes!
Ingredients:
  • 1 1/2 cups uncooked mini penne pasta or other small pasta (about 6 oz)
  • 2 cups cut-up cooked chicken breast
  • 1 cup red grapes, cut in half
  • 8 medium green onions, sliced (1/2 cup)
  • 3/4 cup reduced-calorie mayonnaise or salad dressing
  • 3 tablespoons fat-free (skim) milk
  • 1 tablespoon Dijon mustard
  • 12 watermelon wedges, 1 inch thick
  • 1/4 cup sliced almonds, toasted*
Instructions:
  • Prepare pasta according to package instructions. After cooking, rinse the pasta with cold water and drain well.
  • Combine cooked pasta, diced chicken, fresh grapes, and chopped onions in a large bowl. In a separate small bowl, whisk together mayonnaise, milk, mustard, and salt. Pour the creamy mixture over the pasta salad and gently toss to combine.
  • Arrange 3 watermelon wedges on 6 dinner plates. Top each wedge with a portion of salad and a sprinkle of almonds. Serve and enjoy!
