Chicken Caesar pasta salad

Elevate your salad game with a modern twist on Caesar salad.
Ingredients:
  • 6 chicken thighs
  • Olive oil
  • 10.00 gm smoked paprika
  • 1 large cos lettuce, chopped
  • 262.50 gm Deli Style Caesar Dressing
  • 1/2 small Spanish onion, finely sliced
  • 500.00 ml croutons
  • 500g penne rigate or spiral pasta, cooked (tri colour if available)
  • 50g shaved parmesan
  • Flat leaf parsley, to garnish
Instructions:
  • Preheat the oven to 180°C.
  • Coat the chicken thighs with a drizzle of olive oil and lay them on a baking tray. Sprinkle salt, pepper, and a pinch of smoked paprika on each piece. Roast in the oven for 20 minutes, then pat dry with kitchen paper and dice into bite-sized pieces.
  • Combine cos lettuce with half of the Caesar dressing. Add onion, croutons, chicken, and pasta and toss to mix. Drizzle remaining Caesar dressing and top with fresh parmesan. Garnish with flat leaf parsley before serving.
