Ingredients:
  • 1 1/4 pounds boneless, skinless chicken breast tenderloins
  • 1 tablespoon plus 1 1/4 teaspoons kosher salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided, plus more for garnish
  • 3 tablespoons olive oil, divided
  • 8 ounces dried farfalle pasta (about 3 cups)
  • 3 large garlic cloves, minced
  • 2 teaspoons finely chopped drained canned anchovies
  • 1 3/4 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 2 teaspoons dried Italian seasoning
  • 1/2 cup (2 ounces) grated Parmesan cheese, plus more for garnish
  • 1 teaspoon fresh lemon juice
Instructions:
  • Bring a large pot of water to a vigorous boil.
  • Prepare the chicken: Gently pat dry the chicken using paper towels. Season it evenly with 1 teaspoon of salt and 1/4 teaspoon of pepper. Heat 2 tablespoons of oil in a large skillet over medium heat for about 3 minutes. Place the seasoned chicken in the skillet and cook, turning occasionally, until it reaches an internal temperature of 165°F, approximately 8 minutes. Transfer the cooked chicken to a plate, cover loosely with foil to retain warmth, and set aside.
  • Add the pasta and 1 tablespoon of salt to the boiling water. Cook until al dente, about 11 minutes, stirring occasionally.
  • Prepare the sauce: While the pasta is cooking, heat 1 tablespoon of oil in the same skillet over medium heat. Add the garlic and anchovies, cook until fragrant (about 30 seconds), then whisk in the cream, Dijon, and Italian seasoning. Cook and whisk constantly until slightly thickened (about 3 minutes). Remove from heat and whisk in Parmesan, lemon juice, and remaining salt and pepper until cheese melts.
  • Once the pasta is perfectly cooked, drain thoroughly and combine with the flavorful sauce in the skillet. Toss the chicken tenders in until they are completely coated.
