Delicious summer chicken Caesar pasta salad with bell peppers and hard-cooked eggs, simple and satisfying.
Ingredients:
  • 1 (16 ounce) box mini penne pasta
  • 1.5 pounds chopped cooked chicken
  • 0.5 cup diced green bell pepper
  • 0.33333334326744 cup grated Parmesan cheese
  • 0.33333334326744 cup chopped red onion
  • 2 large hard-boiled eggs, chopped
  • 0.5 (8 ounce) bottle creamy Caesar salad dressing, or to taste
Instructions:
  • Boil a large pot of lightly salted water. Add penne and cook until al dente, about 7 minutes. Drain and rinse with cold water.
  • Combine the cooked pasta with chicken, bell pepper, Parmesan, onion, and eggs in a large bowl. Drizzle with salad dressing and mix until evenly coated. Chill in the refrigerator for a minimum of 2 hours to allow the flavors to meld. Cover with plastic wrap before refrigerating.
