Watermelon Feta Salad Bites

Summer barbecue appetizer: Watermelon feta salad bites. So refreshing!
Ingredients:
  • 1 medium size seedless watermelon, chilled
  • 2 tablespoons red wine vinegar
  • 1/4 cup extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crumbled feta
  • 1/3 cup finely diced onion
  • 1/4 cup finely chopped mint, plus more for garnish ifdesired
Instructions:
  • Begin by trimming both ends of the watermelon to create a flat base. Stand the watermelon upright. Carefully slice off the rind by running a knife along the edge where it meets the flesh. Trim the sides to create 4 straight sides and set aside the trimmings for later use. Proceed to cut the watermelon into approximately 2 dozen 2-inch chunks.
  • Hollow out about 2 teaspoons of flesh from the center of each watermelon cube using a melon baller or small spoon. Save the scooped watermelon for later use. Arrange the hollowed watermelon on a serving platter and set aside.
  • Combine vinegar, oil, salt, and pepper in a medium bowl. Gently fold in feta, onion, and mint. Fill watermelon cubes with the feta mixture and sprinkle with additional fresh mint, if desired.
