Watermelon ice-blocks

Ingredients:
  • 250ml (1 cup) water
  • 110g (1/2 cup) sugar
  • 2 sprigs fresh mint
  • 1kg piece watermelon, flesh cut into chunks
  • 42.00 gm fresh lemon juice
Instructions:
  • In a medium saucepan, combine water and sugar. Stir over medium heat with a wooden spoon until sugar dissolves. Add mint and bring to a boil. Simmer uncovered for 5 minutes until slightly thickened. Remove from heat, transfer to a small bowl, and chill in the fridge for 10 minutes. Strain and discard the mint leaves before serving.
  • Combine the sugar syrup, watermelon, and lemon juice in a food processor, blitz until smooth. Then, strain the mixture through a sieve into a large bowl.
  • Transfer the watermelon mixture into the ice-block molds, seal with the plastic lids, and freeze for a minimum of 3 hours.
