Indulgent watermelon sherbet with fresh fruit, sugar, lemon juice, and cream for a rich frozen treat ideal for summer.
Ingredients:
  • 4 cups diced seedless watermelon
  • 1 cup white sugar
  • 3 tablespoons lemon juice
  • 1 dash salt
  • 0.25 cup cold water
  • 1 (.25 ounce) envelope unflavored gelatin
  • 1 cup chilled heavy cream
Instructions:
  • In a large mixing bowl, toss the watermelon with sugar, lemon juice, and salt until evenly coated. Cover the bowl with plastic wrap and refrigerate for 30 minutes.
  • Blend the mixture in a blender until velvety smooth, then transfer it back to the bowl.
  • In a saucepan, pour cold water and sprinkle gelatin over it. Let it stand for 1 minute. Cook over low heat for 2 minutes. Stir the gelatin mixture into the blended watermelon mixture. Add heavy cream and beat with an electric hand mixer on medium speed until fluffy.
  • Pour the mixture into an ice cream maker and freeze following the manufacturer's instructions until it reaches the "soft-serve" stage. Then, place the ice cream in a lidded plastic container (one or two quarts) and cover the surface with plastic wrap. Seal tightly and let it ripen in the freezer for at least 2 hours or overnight for optimal taste.
