Delightful summertime watermelon cookies!
Ingredients:
  • 2/3 cup granulated sugar
  • 1/3 cup shortening
  • 1/3 cup butter or margarine, softened
  • 1 teaspoon vanilla
  • 1 egg
  • 1/4 teaspoon red food color
  • 2 cups Gold Medal™ all-purpose flour
  • Betty Crocker™ green sugar
  • 2 tablespoons miniature semisweet chocolate chips
Instructions:
  • Combine granulated sugar, shortening, butter, vanilla, egg, and food color in a large bowl and mix with an electric mixer on medium speed or by hand until creamy. Add flour and salt and stir until well combined. Divide dough in half and refrigerate if needed until firm.
  • Form each half of the dough into a 2-inch diameter roll, then flatten one side to create a half circle. Roll the rounded side in green sugar, wrap in plastic wrap, and refrigerate flat side down for at least 4 hours but no more than 24 hours.
  • Preheat the oven to 375°. Slice each roll into 1/4-inch slices and place them flat side down on an ungreased cookie sheet, spacing them 1 inch apart. Press a few chocolate chips, pointed side down, into each slice to mimic watermelon seeds.
  • Bake for 7 to 9 minutes until cookies are golden. Transfer to a wire rack immediately and let cool completely for about 30 minutes.
