Baked wet burrito casserole with beef, beans, cheese, and gravy, topped with onion, tomato, lettuce, and sour cream.
Ingredients:
  • 1 pound lean ground beef
  • 0.75 cup chopped onion, divided
  • 1 (14.5 ounce) can diced tomatoes with juice, divided
  • 1 tablespoon Worcestershire sauce
  • 1.5 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin, divided
  • 0.5 teaspoon ground black pepper
  • 2 cups refried beans
  • 1 (18 ounce) jar beef gravy
  • 1 (10 ounce) can enchilada sauce
  • 4 large flour tortillas
  • 2 cups shredded Cheddar cheese, divided
  • 1 cup sour cream, divided
  • 0.25 cup chopped tomatoes, divided
  • 1 cup chopped lettuce, divided
Instructions:
  • Heat your oven to 375 degrees F (190 degrees C).
  • Heat a skillet over medium heat. Cook ground beef, onion, and garlic until beef is browned and crumbly, about 8 minutes. Drain excess grease. Stir in diced tomatoes, Worcestershire sauce, chili powder, paprika, oregano, cumin, and black pepper. Bring to a boil and cook for 5 minutes, stirring often.
  • Warm refried beans with the 1/4 teaspoon cumin in a saucepan over gentle heat to keep them cozy. In another saucepan, combine the leftover diced tomatoes, beef gravy, and enchilada sauce, and bring it to a boil.
  • Lay tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave for 30 seconds until soft and warm.
  • Lay a warm tortilla on a flat surface and spoon one-fourth of the beef mixture in a line down the center. Add one-fourth of the bean mixture on top of the beef layer and sprinkle a quarter cup of Cheddar cheese over the beans. Fold both sides of the tortilla over the filling and roll it up into a burrito. Place the burrito seam side down in a 9x13-inch baking dish. Repeat with the remaining tortillas to make a total of 4 burritos.
  • Cover the burritos with the rich gravy sauce in the baking dish, and sprinkle the remaining 1 cup of Cheddar cheese on top.
  • Bake burritos until cheese is melted and bubbling in preheated oven for 15 to 20 minutes.
  • To plate, lay each burrito on a serving dish and drizzle sauce from the baking dish on top. Add a dollop of sour cream, the rest of the chopped onion, and tomato on each burrito. Finally, sprinkle 1/4 cup of chopped lettuce over each.
