Delicious wet burritos filled with seasoned ground beef, creamy refried beans, and spicy chiles, smothered in sauce and melty cheese.
Ingredients:
  • 1 pound ground beef
  • 0.5 cup chopped onion
  • 0.5 teaspoon cumin
  • 0.125 teaspoon pepper
  • 1 (16 ounce) can refried beans
  • 1 (4.5 ounce) can diced green chile peppers
  • 1 (15 ounce) can chili without beans
  • 1 (10.5 ounce) can condensed tomato soup
  • 1 (10 ounce) can enchilada sauce
  • 6 (12 inch) flour tortillas, warmed
  • 2 cups shredded lettuce, divided
  • 1 cup chopped tomatoes, divided
  • 2 cups shredded Mexican cheese blend, divided
  • 0.5 cup chopped green onions, divided
Instructions:
  • In a skillet over medium-high heat, sizzle the ground beef until perfectly browned. Toss in the onion to cook until translucent. Drain off any excess grease, then season with garlic, cumin, salt, and pepper. Mix in the refried beans and green chilies until fully combined. Keep warm with the heat off.
  • In a saucepan, blend canned chili, condensed soup, and enchilada sauce together. Heat over medium heat until warmed through. Remove from heat and keep warm.
  • Lay a warmed tortilla on a plate and generously spoon 1/2 cup of the ground beef mixture in the center. Add lettuce and tomato to your preference. Roll up the tortilla, tucking in the sides. Drizzle a generous amount of sauce on top and sprinkle with cheese and green onions. Microwave until cheese is melted, around 30 seconds. Repeat with the rest of the tortillas and fillings.
