Whipped Cauliflower, Low-Carb

Delicious low-carb mashed cauliflower side dish.
Ingredients:
  • 1 head cauliflower, cut into florets
  • 0.25 cup Parmesan cheese
  • 1 tablespoon cream cheese at room temperature
  • 2 teaspoons chicken soup base
  • 2 teaspoons roasted garlic, or to taste
  • 1.5 teaspoons butter at room temperature
  • 0.5 teaspoon milk, or to taste
  • salt and ground black pepper to taste
Instructions:
  • 1. Boil water in a pot. Cook cauliflower florets until very tender, around 10 minutes. Drain in a colander. Place paper towels over the cauliflower and press with a large bowl to remove excess liquid.
  • Combine Parmesan cheese, cream cheese, chicken soup base, roasted garlic, and butter in a bowl. Mix in cauliflower and whip with an electric hand mixer until creamy for about 3 minutes. Gradually blend in milk until reaching desired consistency. Season with salt and pepper to taste.
