Whiskey-Dijon Barbecued Pork Chops with Grilled Veggies

Succulent whiskey-dijon BBQ pork chop with veggies, under 300 calories per serving - ideal for busy weeknights!
Ingredients:
  • 1/3 cup Dijon mustard
  • 1/4 cup packed brown sugar
  • 1/4 cup whiskey
  • 2 tablespoons molasses
  • 2 tablespoons cider vinegar
  • 1 teaspoon red pepper sauce
  • 1 large sweet onion, cut into 1/4-inch-thick slices
  • 2 medium tomatoes, cut in half
  • 4 bone-in pork loin or rib chops, 1/2 inch thick (1 lb), trimmed of fat
  • Chopped fresh Italian (flat-leaf) parsley if desired
Instructions:
  • Prepare the grill by greasing the rack and heating it up. In a saucepan, combine mustard, brown sugar, whiskey, molasses, vinegar, and pepper sauce. Heat the mixture over medium-low heat for 10 minutes until it thickens slightly, stirring occasionally. Take it off the heat and transfer 1/4 cup of the sauce to a small bowl.
  • Coat the cut sides of onion slices and tomato halves generously with 2 tablespoons of sauce. Brush half of the remaining sauce onto the pork chops. Grill the pork, onions, and tomatoes cut sides down over medium heat. Brush the tops of the onions and tomatoes with the remaining 2 tablespoons of sauce from the bowl. Brush the tops of the pork chops with the remaining sauce in the pan.
  • Preheat grill, then cook for 5 to 7 minutes, turning pork and onions once (leaving tomatoes unturned), until pork is no longer pink in the center, onions are crisp-tender, and tomatoes are tender. Remove any extra sauce and garnish with chopped fresh parsley, if desired.
