White Bean, Sausage and Spinach Casserole

Elegant casserole featuring white beans, Italian sausage, spinach, and tomatoes - perfect for dinner parties.
Ingredients:
  • 3 tablespoons olive oil
  • 1 lb bulk mild Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, finely chopped
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 bag (5 oz) fresh baby spinach
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
  • 1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
  • 1 can (19 oz) Progresso™ cannellini beans, drained, rinsed
  • 3/4 cup Progresso™ plain panko crispy bread crumbs
Instructions:
  • Preheat the oven to 375°F and generously spray a 13x9-inch (3-quart) baking dish with cooking spray.
  • In a large skillet, warm 1 tablespoon of oil over medium-high heat. Cook the sausage for 5 to 7 minutes until no longer pink, stirring often. Add onion, garlic, salt, black pepper, and red pepper flakes; cook for an additional 3 to 4 minutes until the vegetables slightly soften. Sprinkle flour over the mixture and cook for 2 minutes, stirring constantly.
  • Incorporate half of the spinach into the sausage mixture, stirring until wilted for about a minute. Follow by adding the remaining half of the spinach and continue cooking and stirring until wilted. Then, add the tomatoes and beans, cook for about a minute while stirring and scraping the bottom of the pan until everything is well combined. Remove from heat and transfer the mixture to a baking dish.
  • In a small bowl, combine bread crumbs and the remaining 2 tablespoons of oil. Sprinkle this mixture over the top and bake for 25 to 30 minutes, or until bubbly around the edges and golden brown on top.
