Elevate your hummus with a unique twist for a standout dip.
Ingredients:
  • 10 garlic cloves, unpeeled
  • 250ml vegetable liquid stock
  • 2 x 400g cans cannellini beans, drained, rinsed
  • 200g fetta, crumbled
  • 99.00 gm tahini
  • 62.50 ml finely shredded mint, plus extra to serve
  • Crackers, vegetable, to serve
Instructions:
  • Preheat the oven to 200C/180C fan-forced. Wrap garlic in foil and roast for 25 minutes until soft. Squeeze out the softened flesh, discarding the skin.
  • Blend the stock, beans, feta, garlic, tahini, and lemon rind until creamy. Season with salt and pepper. Mix in fresh mint. Refrigerate until serving. Garnish with additional mint before serving.
